4 cups old fashioned oats3/4 cup chopped pecans1/3 cup shredded coconut1/2 cup pached light brown sugar1/2 tsp salt1/2 tsp ground cinnamon1/4 cup canola oil1/4 cup honey1/8 cup maple syrup1 tsp vanilla1 1/2 cups raisins
Preheat oven to 300 degrees F. In a bowl mix the oats, pecans, brown sugar, salt and cinnamon. In a saucepan warm the oil, maple syrup and honey. Whisk in vanilla. Carefully pour the liquid over the oat mixture. Stir gently with a wooden spoon; 15X10 inch baking pan. Bake 40 minutes, stirring carefullly every 10 minutes. Transfer granola-filled pan to a rack to cool completely. Stir in raisins. Seal granola in an airtight container. Store at room teperature for 1 week or in the freezer for up to 3 months.
