Kale salad with quinoa and apples

4 cups of kale chopped0.5 cup quinoa cooked and cooled down 2 Apples diced 0.25 cups of sliced almonds Dressing Lemonjuice from 2 lemons 2tbsp olive oil 4 tbsp chopped shallots 1 clove garlic minced salt and pepper to taste
Start by mixing the ingredients for the dressing in a small bowl. This will allow the shallot to soften and combine the different flavours.
Cook the quinoa according to the package. Leave to cool.
Remove stems from kale and chop
Dice Apples
Cook the almonds on a dry skillet for a couple of minutes until they are golden brown. Watch out they burn easily.
Put the kale and the dressing into a mixingbowl and "massage" the kale. Do this several times until the kale has somewhat wilted.
Add the remaining ingredients and serve.
