Ingredients
.5 cup Onion chopped2 large stalk celery chopped1 cup zucchini chopped1 Tbsp olive oil1 whole egg4 egg whitesSalt and pepper to tastes
Directions
chop vegetables
add oil to pan and allow to heat
add celery and let cook for a minute or two before adding onion
When onions start caramelizing add zucchini
once zucchini is done add beaten eggs and salt and pepper

Serving Size: makes 2 1 1/2 cup servings
