Ingredients
Brown Rice, 1 cupDice tomatoes, 1 canBlack beans, 1 cangreen pepper, 1/2cup choppedgarlic clove, mincedolive oil, 1 Tcilantro, fresh 1/4 cup choppedlow fat cheddar cheesegreen onions, sliced
Directions
Prepare rice. Drizzle olive oil in pan. Add garlic and green pepper. Saute lightly. Add tomatoes. Add beans (drained and rinsed). Stir in rice. Heat through. Add cilantro. Garnish with cheese and green onions.

    THese was very good. I made it with sauted onions and garlic as I am not a fan of bell pepper. Then added the tomatos and black beans, cooked instant brown rice and topped with cheese. My kids loved it! Definatley a keeper! - 5/19/08
