Vegetable & Turkey Soup, Not Your Average Soup

Ingredients
1 can Del Monte Diced Tomatoes, No Salt Added1 can Stewed Tomatoes1/2 lb, Ground turkey, 93% lean1 Green Peppers, diced1 med onions, diced1/2 Eggplant, fresh, peeled, diced1 small zucchini, diced1 cup of dry brown rice1 can Mushrooms1 stalk celery, diced
Directions
brown turkey burger with garlic, onions and peppers.

Puree stewed tomatoes, this makes the sauce thicky and yummy.

Add pureed tomatoes to stock pot with browned turkey, garlic onions, peppers, eggplant, zucchini, mushrooms, celery, diced tomatoes, 1 cup of water and brown rice. Cook on low for 10-15 mins. Add seasonsings to taste.

I often add a can of condensed tomato soup for a nice flavor. I didn't have any on hand when I made this recipe.
