8 cups pinto or northern beans1 box Stove Top Stuffing Mix (dry)2 lbs. ham, chopped1 large onion, chopped2 cups chopped carrots2 cups chopped celery1 stick Blue Bonnet Light Margarine10 cloves garlic, minced12 cups water1 tbsp dried oregano1 tbsp. dried basil1 large tomato, diced4 chicken bouillon cubes
Melt margarine in the bottom of a large stock pot. Saute onions, carrots, celery and garlic. When translucent, add water and chicken bouillon cubes and herbs. Boil for 15 minutes. Add remaining ingredients. Simmer over low heat for 30 - 45 minutes.
