1 Pillsbury Refrigerated Rolled Pie Crust5 large eggs1 c. fat free half and half3/4 c. diced ham (I use Morrell)1 1/2 c. shredded swiss cheese2 c. chopped fresh spinach1 c. sliced fresh mushrooms1/2 tsp. cayenne pepper
Preheat oven to 325 degrees. Roll out pie crust and place in bottom of 10" glass pie pan. Sprinkle ham, onion, spinach, mushrooms, and cheese evenly over bottom of crust. In med. bowl, beat eggs and milk, combine well; then mix in cayenne pepper. Slowly pour egg mixture in pie pan, distributing evenly. Bake in preheated 325 degree oven for 50 minutes or until egg is set in (center doesn't jiggle when shook).
