2.5 cup Quinoa - Cooked1 medium Cucumber Peeled & chopped12 cherry tomato's cut in half1.5 tbsp Extra Virgin Olive OilFresh Mint to tasteLemon juice to taste Salt & Pepper to taste
Directions
Quinoa should be cooled before mixing all ingredients together. Once combined refrigerate for 30 minutes for flavors to marry.
