Quinoa-black bean casserole

Ingredients
1 cup cooked quinoa3 cups cooked black beans (or two 15-ounce cans., drained and rinsed)2 large sweet potatoes, shredded1 cup shredded low fat cheddar cheese1 Tbsp ground cuminliberal pinches salt & pepper2 eggs1 cup salsa2 Tbsp fresh cilantro, chopped for garnish
Directions
Preheat oven to 350 deg. prepare 9"X9" casserole dish with nonstick cooking spray.
Mix all ingredients but only 1/2 the cheese in a large bowl. Pour into casserole dish, sprinkle with remaining cheese, Bake uncovered for 30 min. Garnish with cilantro.
