1 tablespoon olive oil1 quarter onion - diced1 bell pepper - diced1 squash or zucchini sliced or diced1 cup mushrooms - sliced1 cup fresh spinach2 cloves diced garlic1 can diced tomatoes
Dice and sautee onion, bell pepper, squash and oil. After they begin to soften, add sliced mushrooms, fresh spinach and garlic. After spinach wilts, stir in a can of diced tomato. Add any seasonings (ie Mrs Dash, red pepper flake, salt, pepper, etc)
Simmer 5-10 minutes. Can be served alone or over pasta.
