Sweet Potato Hash

Ingredients
2 medium sweet potatoes, peeled and cubed2 small potatoes, peeled and cubed1 tsp olive oil1 tsp salt (or to taste)1 tsp cinnamon1 tsp brown sugar1 tsp black pepper2 small red onions3 eggs
Directions
Cube potatoes and toss with oil and spices. Place in a roasting pan in preheated 450* oven for 30-45 minutes.

Meanwhile, slices onions and caramelize in a cast iron pan over low heat. This usually takes about 30 minutes. When potatoes are done, mix in to pan with onions. Make three wells in hash, and crack one egg in each well. Place back in oven, and cook eggs through to your liking.
