Vegetarian Stuffed Bell Peppers

Ingredients
1 box Near East Quinoa- prepared3 whole bell peppers1/4 onion1/2 can great northern beans1 can Rotel with chiles1/3 cup shredded cheddar
Directions
Cut peppers in half and remove seeds and veins.

Place in a baking dish. Drain liquid from Rotel into the bottom of the baking dish.

After quinoa is prepared, add onion, beans, drained rotel and cheese. Fill pepper cups. Bake covered 1 hour, then additional 15 minutes uncovered.
