Trader Joes Organic White Quinoa, 0.5 cup *Chicken Broth, Trader Joe's - Savory Chicken Flavor = 1 Cup, 1 cup * 1/4 green bell pepper* 1/4 cup yellow onion, chopped *Trader Joe's Chicken Sausage, Spicy Jalepeno (2 links)*Extra Virgin Olive Oil, 1 tbsp Cayenne pepper Garlic powdersalt and pepper to taste
Cook the quinoa according to package directions, using chicken broth instead of water.
When quinoa has about five minutes left, sauté the pepper, chicken sausage, and onion in olive oil until vegetables are tender. Season with cayenne, garlic powder, salt, and pepper. I like the sausage almost overcooked.
Serve over quinoa.
