Extra virgin olive oil (1 Tbsp)1/4 cup onions, chopped1/4 cup mushrooms, chopped1 zucchini, sliced thinly lengthwise4 oz cooked breakfast sausage1 Tbsp. half and half1/4 tsp. garlic powder1/4 tsp. onion powder2 eggs1/4 sliced avocadoSalt & peper
Preheat oven to 375. Heat a cast-iron skillet on medium-high; add a tablespoon or two of olive oil for about a minute, then add onions and mushrooms. Turn heat to medium and saute for about 10 minutes, stirring frequently. Layer sliced zucchini so it covers the bottom of a small glass baking dish, then top with the sauteed veggies, then layer with the sausage. In a glass mixing cup, whisk together the half and half, garlic powder and onion powder; pour over ingredients in baking dish. Sprinkle with salt & pepper; bake for 30-32 minutes. When nearly done, scramble eggs. Serve the "lasagna" topped with eggs and sliced avocado.
