Cauliflower meatless meatballs

Ingredients
* Cauliflower, cooked, 2.5 cup (1" pieces) * Egg, fresh, 2 large * Olive Oil,1tbsp * Garlic, 6 cloves * Parsley, 0.5cup * Parmesan Cheese, grated, 0.3cup * Bread crumbs, dry, grated, plain, 0.5 cup
Directions
Cook the cauliflower till tender. Drain as much water off as you can. Saute the garlic in the oil. Mix all ingredients together. Form into balls by the tablespoon. Bake at 350 for about 45 minutes until firm and slightly browned. Serve as an appetizer or with sauce and pasta.

Makes about 24 "meatballs"

    No specifics for the garlic, so I minced it before sauteing. No fresh parsley so I subbed 1.5T dried; also added oregano and basil. Had em with spaghetti and Marcella Hazan's tomato sauce (do a search, you won't regret it). SO TASTY. I will definitely be making this again. Thanks! - 10/30/13

    I'm not a lover of cauliflower, but this taste great. I steamed till tender so not as much water to drain off and loose flavor. Gave it a whirl in the food processor to break it down. Then baked as a pie as I didn't have the time to ball. - 7/19/13
