1 large onion, chopped2 stalks celery, sliced evenly3 carrots, diced1 1/2 Tbsp. curry powder5 cups chicken stock5.5 ounces Kale1/4 cup diced tomatoes10 oz. boneless skinless chicken breast, cooked and diced1 granny smith apple peeled, cored & dicedfresh celery leaves
Chop onion, carrot, celery and onion. Remove tough stems from kale and chop. Dice chicken.
Add veggies, apple,chicken, spices and broth to large pot bring to boil over high. Reduce heat to med low and simmer for 50 minutes or until veggies are tender.
