* Peppers, sweet, red, raw, sliced, 1.5 cup * Onions, raw, 1 cup, chopped * Garlic, 3 cloves * Corn Tortillas, 10 tortillas, small * Chicken Breast, no skin * Monterey Cheese, .5 cup, shredded * Lucerne Plain Fat Free Yogurt, 12 oz * Creamed Cottage Cheese, 4 oz
Chop veggies; boil meat. Shred meat and mix with veggies and cottage cheese. Fill corn tortillas and roll. When all enchiladas are rolled, cover fully with yogurt, sprinkle with cheese and bake.
