Smoky Sweet Potato Soup

Ingredients
1 tbsp of olive oil2-3 scallions3-4 cloves garlic1 sweet potato, baked or fresh1 cup crushed tomatoes2 cups vegetable broth2 tbsp of peanut buttersalt, to tastechipotle powder, to tasteliquid smoke, optional to taste
Directions
Saute scallions and garlic in olive oil. When they are soft add the sweet potato. I used a leftover baked potato but you can just dice a fresh one. Saute the potato with the scallions and garlic. Add the crushed tomatoes and thent he vegetable broth. Bring to a boil and then turn down to simmer. If you use a baked potato the simmer is only about 15-20 minutes. If using a raw potato, simmer until it is soft. Add peanut butter and then use an immersion blender to cream the soup. Add seasonings and enjoy.
