Best Pork Green Chili

Ingredients
1 lb pork tenderloin, cubed1 small onion, chopped3 cloves garlic, chopped2 Tbsp Olive Oil1 can diced tomatoes (with juices)1 1/2 cup green chili's (more or less depending on how hot you want it)6 cups water1 cup flour
Directions
Put oil in bottom of a large soup pot. Cook pork, onion and garlic in pot. Season with salt and pepper.
Add water (more or less depending on how thick/thin you like it), tomatoes and chilies. Stir well and bring to a boil.

While you are waiting for that to boil, brown the flour in a skillet; stirring often. Be careful not to burn the flour or it will ruin your chili.

When boiling, gradually whisk in flour making sure to get the lumps out.

Reduce heat to low, cover and simmer, stirring occasionally, for at least one hour. The longer you simmer the more flavorful the chili will be.

    I have the same recipe, it's a standard at our house but we add about 1 Tbls of ground cumin. I also skip a step by adding the flour to the onions and pork when they are done browning, then I add the water or chicken broth. - 4/8/08

    What an excellent base! This has been adapted in my country kitchen for our varied "hotness" tastes. My husband is cajun, so we added some cayenne peppers for him, me...the hotter the better, and for my daughter who is somewhat bland... green bell peppers and garlic. All 3 adaptations turned out gr8 - 2/22/11

    Excellent recipe! I added a small can of Herdez green salsa and some saute'd green bell peppers to it. We're having it over brown rice and planning on wrapping left-overs in corn tortillas for burritos tomorrow. Yummm! - 4/9/08
