Jerk Chicken Nachos

Ingredients
6 c tortilla chips2 c (8oz) cheddar and monterey shredded blend1 sm. bell pepper (yellow or red)2 tbsp. fresh cilantro3 c diced,cooked chicken2 tbsp. Jamaican Jerk Rub1 lime1/4 c sour cream
Directions
Preheat oven to 425F. Arrange tortilla chips in a slightly overlapping laye. In a large bowl, combine chicken, cheese and 1 tbsp jerk rub(which can be ordered through Pampered Chef), mix gently. Sprinklw chicken mix evenly over tortilla chips. Bake 5-7 minutes or until cheese is melted. Remove and let cool. Meanwhile dice bell pepper. Cut lime in half crosswise. Juice half the lime into a small bowl, add remaining jerk rub and bell pepper and mix well. Snip cilantro. Slice lime. Cut slices in half. Spoon bell pepper mix over nachos; sprinkle evenly with cilantro. Top with sour cream. Garnish with lime slices.
