Vegan Stuffed Peppers

Trader Joe's Beef-less Ground Beef, 2 cup (one pkg)Quinoa cooked, 1 cup (cooked per package)Yellow, red, or orange bell peppers, three (3) sliced in half and seeds removedOnions, raw, .5 large, choppedTomato Basil Marinara or tomato sauce, 1 cup Celery, raw, 3 stalk, large (11"-12" long) Cheese, Dairy-Free, Daiya, Mozzerella or cheddar Style, 3 serving Garlic (several cloves)
Saute onions, celery until soft. Add garlic.
Mix marinara, beef-less ground beef, quinoa, and veggies.
Stuff peppers with mixture.
Bake at 400 for 30 minutes. Add Daiya imitation cheese and bake until melted (use broiler to speed things up).
Serving Size: One half pepper
