Refreshing Wheat Berry Salad

2 C Cooked Wheat Berries1/2 c Dried Blueberries1/2 c Dried Cranberries1/2 c Sweet Red Peppers diced1/4 c onion diced1/2 c celery diced1/4 c radishes diced1/4 c Olive Oil1/4 c Red Wine Vinegar
Cook Wheat Berries, drain and add to a medium bowl.
Dice veggies, I leave the dried fruit whole, add both to the same bowl.
Add vinegar and oil and mix.
Cover and refrigerate a few hours.
Best served Cold.
Will stay in frig for at least a week.
Serving Size: makes 8 1/2 cup servings
