Greek Style Orzo

1/2 cup orzo1 plum tomato , chopped1/2 medium zucchini , chopped1 medium scallion , chopped1/4 cupp Kalamata olives1 T Olive Oilsalt to taste1/2 cup parsleyjuice of 1/3 lemon
Saute in olive oil, chopped tomato, chopped zucchini, chopped scallion. season with salt. At the same time, boil water and cook orzo. When the vegetables have softened, add in the olives and parsley off the heat. Mix to combine. When the orzo is finished cooking, drain. add sauteed vegetables to the orzo and mix to combine. Add lemon juice, adjust seasoning.
