Chicken Salad with Orange Dressing

2 hearts of Romaine lettuce2 hearts of green leaf lettuce2 hearts of red leaf lettuce2 Yellow Peppers (Sweet)1 large Tomato1 Small can sliced black olives1 Small Red Onion 1/4 cup green salad olives3 Boneless Skinless Chicken Breast (Free Range)2 TBS. Extra Virgin Olive Oil 1 tps. fresh crushed Thyme, Rosemary,and Basil 2 cups Organic Orange juice or fresh squeezed Juice of 1 lemon
In large skillet add olive oil and chicken breast cook on med. to med. high heat till done. In med. sauce pan add Orange juice and lemon juice and cook till reduced about 20 min on medium heat.
Meanwhile in large bowl shred lettuce, then dice tomato,peppers, and onion and toss into bowl and set aside.
Take cooled Chicken breast's and dice into bite sized pieces and add them to lettuce mix. Then check on orange juice mix and add your Thyme,rosemary,and basil, stir let cook for few more min to infuse the flavors of the spices. Then you want to remove from heat and let cool completely it should be the consistency of syrup. The goal of the Orange dressing is to remove the water from the juice. You will want to place the dressing into a glass container for pouring that you can seal, because there is normally some left over.
Place your salad mixture into a small bowl and lightly drizzle with your dressing
