Rich and Hearty Beef Vegetable Soup

Ingredients
12 cups water,2 cup zucchini, chopped2 cups carrots, chopped3 medium potatoes, chopped7 cloves of garlic, minced2 cups of green beans2 cups frozen yellow corn3 cups crushed tomatoes1.5 lb. flank steak, cooked and shredded3 tbsp. olive oil1 tbsp. chili powder1 tsp. ground thyme1 tsp. coarse ground black peppersalt to taste
Directions
In the bottom of a large stock pot, add olive oil, onions, carrots, garlic and zucchini. Saute for 3 - 4 minutes. Add water, green beans, corn, potatoes, tomatoes, beef and spices. Bring to a boil. Reduce heat and simmer (covered) for 30 - 45 minutes. Delicious! 15 very generous 1.5 cup servings
