1 c. onions sliced thin.1 tsp. Coconut Oil2 c. fresh basil1 tsp. Coconut Oil6 Chicken Thighs, chunkedRed Curry Powder to tasteSalt to tastePepper to tasteGround Red Pepper to taste1 1/2 c. Coconut Milk
In 1 tsp coconut oil, saute the onions for a few minutes. Add the basil and saute a few more minutes until the consistency that you like. Remove and keep warm.
In 1 tsp. coconut oil, add the chunked up chicken to the pan. Saute until cooked through. Add the curry powder, salt and black pepper and the ground red pepper. Add the coconut milk and simmer until the consistency you like. You may use less milk. I think 1 c. would have been fine.
