Hempel Style Mock Turtle Soup

3 lbs. Lean Ground Chuck2 Large Onions1 Small stalk celery1 Bunch of carrots10 oz. Bottle Worchestire sauce35 oz. Bottle Catsup2 Lemons sliced (remove seeds)1 pt. Good burgundy wine1 cup White vinegar1 tsp. Ground allspice1/4 tsp. Ground cloves1/4 cup Sugar (or to taste)2 tbsp. Salt2 tsp. Ground black pepper1/4 cup Dry sherry14 oz. Ginger snaps64 oz. Beef stock8 Hard boiled eggs peeled and chopped
1. Grind ginger snaps, onions, celery, carrots. Chop hard boiled eggs and set aside. Slice and chop up lemons. (deseed lemons-seeds will make the soup bitter)
2. Brown meat in a large three gallon or larger stock pot.
3. Add spices, onions, carrots, celery, lemons, salt and pepper.
4. Add beef stock and one gallon water and bring to a boil.
5. Cook about 1 1/2 hours or until vegetables are soft. Add ground ginger snaps and stir out the lumps. Add ground hard boiled eggs.
6. Reduce to simmer for 3 hours stirring occasionally.
Serving Size: Makes 32-1 cup servings
