Carrott cake

Ingredients
1/2 cup apple sauce1 tsp baking powder2 eggs1 tsp vanilla extract1/2 tsp salt3/4 cup white sugar2 cup grated carrot2 tsp cinnamon1 1/2 cups whole wheat flour
Directions
Grate carrot. Beat eggs. Mix all ingredients. Then add eggs, carrot, and apple sauce. Mix well. Spray 9x13 pan and bake at 350* for 45 min, or until toothpick comes out clean.

    I used splenda white sugar, a bit of spenda brown sugar and a bit of vanilla protein powder. I made them into cup cakes. They are great. Heaven with icing (a mix of power sugar and whipped cream cheese). - 9/17/14
