Cottage Cheese pancakes, low sodium

Ingredients
2 Cups 'no added salt' cottage cheese3 eggs, large1/2 Cup whole wheat flour2 tsp cinnamon2 Tbsp Wheat germ1 med apple, chopped
Directions
Put first 5 ingredients into a blender and whirl till smooth. Let batter rest 1 hour or overnight in fridge. Add chopped apple. Spoon onto greased hot griddle making 12, 4 inch pancakes. turn when top of pancake has lost it's gloss and bubbles have mostly all burst.
Makes 6 servings, 2 pancakes per serving.
You can add raisins or dried cranberries to the batter if desired.
