End-of-the-Rainbow Layer Cake

Ingredients

8 eggs 4 cups sugar 4 1/2 cups all-purpose flour 1 1/2 cup oil 2 cups vanilla soymilk 1 T plus 1 t vanilla extract 1 1/2 T baking powder 1 t salt 2 cans vanilla frosting
Mix eggs & sugar until thick, about 1 minute (no longer). Add remaining ingredients mixing until smooth.
Divide the batter into five small bowls. Use food coloring to achieve desired tints.
Bake in a greased & floured round pans for 30-45 minutes or until toothpick inserted in middle of cake comes out clean.
Allow to cool, then layer the cakes. Spread vanilla frosting in between each layer and decorate as desired.
Makes 24 slices
