Leprechaun Bundt Cake

Ingredients
1 cup sugar2/3 cup canola oil 1 14 oz can light coconut milk1/4 cup rice milk (or soy or almond milk)1/4 cup lemon juice3 T finely grated lemon zest2 t vanilla extract3 cups flour (organic whole wheat pastry flour)2 tsp baking powder1 tsp baking soda1 tsp salt1/2 cup green frosting Green sprinkles
Directions
Preheat the oven to 350* . Lightly grease an 8 or 10 inch bundt pan. In a large mixing bowl, combine the granulated sugar, oil, coconut milk, rice, soy or almond milk, lemon juice and zest and vanilla. Stir to combine. Sift the flour, baking powder, baking soda, and salt into the wet ingredients in batches, mixing well after each addition. Pour the batter into the Bundt pan. Bake for 1 hour, or until a knife inserted through the cake comes out clean. Remove from the oven and let cool for about 10 minutes, then place a cutting board over the cake pan, gently flip over, and release the cake from the pan. Let cool completely.
Drizzle with frosting and sprinkles
Slice and serve.

    I HAVEN'T TRIED THIS RECIPE AND I TRY TO STAY AWAY FROM SWEETS BUT WHERE IS EVERYONE COMING UP WITH 552 CALORIES PER SLICE. IT SAYS 188.2 CALORIES ON THE RECIPE. I HAVEN'T SEEN 552 CALORIES EXCEPT IN THE REVIEWS. PHYL32 - 3/8/15

    The recipe that I am looking at has 188.2 calories per serving. Is that wrong? Where is everyone getting over 500 calories per serving? I even looked at the nutritional breakdown.....still not 500 plus calories per serving. Now I am afraid to make this for I don't know correct caloric value. - 3/8/15

    Yikes! I could have 6 mugs of green beer for this many calories (and only about 1/3 of the carbs). Although, if I did drink that much beer I wouldn't care about calories. Guess if I want something green for dessert I'll stick with low fat pistachio pudding. - 3/8/14

    I got a chuckle out of this recipe with all the healthy ingredients. Then, green frosting (sugar, saturated fats, food dye) & green sprinkles (more more sugar & food dye) which may or may be vegan.
    By the way, who has EVER been able to get 24 slices out of a bundt cake? 16 maybe, but not 24. - 3/8/16

    Of course an abundance of lime zest is what I prefer for the top! :-) I would choose another dessert for myself, 24 servings would make a piece far too small to be satisfying! - 3/8/15

    I calculated it at 190 cals per serving for 24 servings. So if you want a tiny sliver of cake (without frosting) for almost 200 calories, go for it! I'll pass. - 3/8/15

    The recipe stats are 188.2 calories per slice. I am diabetic and I can handle just having a thin slice of this! I do not even see the numbers "552" anywhere here - 6/16/20
