Vegetarian "Meatloaf" Muffins

Ingredients
1 cup pecans finely chopped1 16 oz container of lowfat cottage cheees2 cups Cornflakes3 eggs beaten1/2 cup red pepper finely chopped1 package onion soup mix1 teaspoon dried oregano1 teaspoon dried basil1/2 teaspoon spanish paprika1 tablespoon olive oil
Directions
Mix all ingredients together and divide into twelve muffin cups (I use ice cream scoop to make sure are even). Bake at 375 degrees for 30 minutes or until tops are brown. Muffins will get more solid as they cool.
