No-Meat Delicious Fried Rice

Ingredients
3/4 cup carrots chopped into tiny cubes1 cup of fresh mushrooms chopped into tiny cubes1/2 cup of frozen or fresh peas1/3 cup of chopped green onions1 clove garlic minced2 tbs unrefined sesame oil (toasted or untoasted)2 tbs butter3 tbs soy sauce2 eggs optional2 cups of dry rice (I like Jasmine)
Directions
Cook 2 cups of dried rice. While the rice is cooking, saute the carrots until partially cooked in a very large pan. Add the peas, chopped green onions, and garlic, let them heat through. Add the mushrooms. Scramble the eggs in a separate pan and add to the mixture. Turn the heat to low. Add the oil, soy sauce and rice to the pan and mix. Adjust to taste.
