Super Veggie Quiche

1 10oz package of frozen chopped spinach, thawed1 16oz package of frozen cauliflower florets, thawed (or 2 cups fresh)1 cup diced tri-color bell peppers10 organic pastured eggs1 tbsp. minced garlic2 tbsp coconut oilsalt and pepper
Preheat oven to 350 degrees.
Grease 13x9 baking dish with 1 tbsp. coconut oil. Set aside.
Sautee cauliflower in 1 tbsp. coconut oil until slightly softened. Add spinach, bell peppers, and minced garlic - cook another 1-2 minutes. Spread veggie mixture into prepared baking dish.
In separate bowl, whisk eggs until well scrambled. Season with salt and pepper.
Pour eggs over veggies and spread with spatula for even distribution. Bake uncovered for 25-30 minutes.
Serving Size: makes 6-8 servings
