Tofu Red Pepper Scramble

Ingredients
*Wegman's Extra Firm Organic Tofu, 5 serving BELL PEPPER (RED), 1 servingSalt, 1 dash Pepper, black, 1 dash Garlic powder, .25 tsp *Cumin seed, .125 tsp* 100% Extra Virgin Olive Oil Cooking Spray, 6 serving.25 cup raw onions
Directions
Press tofu for at least half an hour to remove liquid. Spray pan with cooking spray and heat over low- med low heat. Dice onion and pepper and add to pan. Cook until soft. Rough chop or mush up tofu and add to pan when onion and pepper are soft. Add salt, pepper, garlic powder and cumin to taste. Stir. Spray again as needed. I like to cook mine well done.
