Thai Coconut Slow Cooker Chicken

Ingredients
2 lb boneless skinless chicken breast cut into cubes5 large carrots, peeled and diced 1 medium onion, peeled and quartered 3 cloves garlic, peeled 1 large bell pepper, seeded and chopped 1 can tomato paste1 can coconut milk (lite)1 1/2 tsp salt 1 tbs curry powder1 tbs garam masala1 jalapeņo, seeded and halved2 tbs water1 1/2 tsp cornstarch Rice
Directions
Grease slow cooker with Pam. Place chicken and carrots on bottom of slow cooker.

Place the rest of the ingredients (except water and cornstarch) in food processor and process together until mixture is mostly smooth

Pour sauce over chicken and carrots. Mix well, then cover and cook on low for about 6 hours.

An hour before serving, mix cornstarch and water in a small bowl until cornstarch is dissolved. Pour mixture into slow cooker. Stir to combine and continue cooking for another hour.

Serve over rice.
