Sweet Potato Casserole

Ingredients
4 large sweet potatoes1/4 cup 1% milk2 tsp vanilla extract2 tsp cinnamon4 tsp packed brown sugar8 marshmallows
Directions
Peel, cut large cubes and boil sweet potatoes for about 40 minutes. Pre-heat oven to 350. Drain sweet potatoes then add milk, vanilla, cinnamon and mix well with hand mixer. Spread mixture into a prepared casserole dish (use non stick cooking spray). Sprinkle brown sugar and sugar over the top. Press the 8 marshmallows on top and bake in the oven at 350 until marshmallows are golden brown.
