Cinnamon Applesauce Pancakes

What You'll Need:2 cups all-purpose flour3 teaspoons baking powder1/4 cup sugar1/2 teaspoon salt2 cups water1/2 cup applesauce1 teaspoon ground cinnamon1/2 teaspoon vanilla extract2 tablespoons vegetable shorteningserv. size (3 -4 inch pancakes)
Directions
What To Do:

In a large bowl, combine flour, baking powder, sugar, and salt. Add remaining ingredients except shortening; mix well.
In a griddle pan or large skillet over medium heat, heat shortening. Pour 1/4 cup batter onto hot griddle and cook 2 to 3 minutes, or until bubbles begin to form, then turn pancakes over and cook an additional 2 to 3 minutes, or until golden brown. Continue in batches until all batter is used.

Serving Size: makes 12 -4 inch round pancakes
