Butternut Squash and Tomato Bisque

Ingredients
5 C butternut squash cubes1 T. olive oil1 large chopped onion28 ounce can of whole tomatoes1 vegetable bouillon cube3.5 C water2 T. honey
Directions
Bake butternut squash cubes at 350 degrees in a small amount of water for 30 minutes or until tender. Sauté onion in the tablespoon of olive oil. Puree the tomatoes in a blender and add the honey, butternut squash, and onion; process until smooth. Transfer ingredients to a cooking pot and heat all the way through. Garnish with chopped tomato.
