Peanut Noodles with Chicken

Ingredients
4 tbs Peanut butter (creamy)1 cup carrots sliced1 sweet pepper1/2 onion3 cups of rice noodles (thick)2 chicken thighs3 green tail onions1/4 cup peanuts crushed or chopped2 tbs sesame oil1 tbs cider vinegar1 tsp garlic2 tbs ground gingerjuice from 1 lime
Directions
SAUCE:

Combine Peanut butter, sesame oil, cider vinegar, ginger, garlic and whisk till blended. if thick ass a little chicken stock.

Cook noodles according to directions and drain and set aside.

Slice chicken and heat oil up in wok. Add chicken and cook part way through adding vegetables and stir fry them until cooked through. Add sauce and noodles. Adding more broth if really thick.

Place in bowl and garnish with green tail onions and Crushed peanuts.
