1 package of Fresh Express Cole Slaw(Green Cabbage, Carrots & Red Cabbage Mix)3-4 Medium Sized Avocados1 Medium Sized Lemon & ZestHalf of a Red Onion2-3 Roma TomatoesGarlic PowderSalt & Pepper
In a large bowl toss the Cole Slaw Mix with salt, pepper and a good squeeze of half the fresh lemon. Add 1/2 tsp. of fresh lemon zest. Toss and combine well.
In another bowl; Mash up the avocados until creamy and sprinkle in salt and pepper lightly. Sprinkle in garlic powder to your taste. (I use about a tsp.) Add the diced tomatoes and red onions. Mix in well. Use the other half of the lemon and squeeze over mixture. Add in 1/2 tsp. lemon zest. Mix well.
Now, add 1/4 C. of Fat Free Sour Cream and stir until smooth.
Pour the Avocado Dressing over the Cole Slaw Mix and combine well. Taste Test to see if you need more salt, pepper or garlic powder. Chill for at least 30 minutes before serving.
Serving Size: Makes 8 1-Cup Servings

Awesome! =o) You're Welcome! I always feel great when I make it because of NO MAYO! Love it as side w/hamburgers (turkey burgers) because u get a "crunch" which keeps me away from chips! lol
