1 pound ground sirloin1 small white onion, chopped2 clove garlic, crushed1/2 cup green pepper, chopped3/4 cup red pepper, chopped1 1/2 cups Great Northern Beans, cooked or (1/2 cup dry measure)1/2 cup Muir Glen Organic Fire Roasted Tomatoes, diced1 cup Green Giant Whole Kernel Corn1 tsp. EVO with herbs1 tsp. dried Thyme1 tsp. dried Paprika1 tsp. Chili Powder2 tsp. dried Basil1 tsp. dried Oregano1/4 tsp. Chipotle Pepper, dried, ground18 Black Kalamata Olives, diced6 Tbsp. Kraft 2% Mexican Four Cheeses4 oz. Tostitos Garlic and Black Bean Chips (6 chips per serving)
The night before: Soak 1.5 cups Great Northern Beans in 4 cups water overnight. Rinse thoroughly and add 4 cups water with Knorr Vegetable Cube or beef broth. Simmer for 1.5 hours or until tender. Do not stir to prevent bean casings from falling off. Add more water to beans during cooking if needed to keep covered.
Spray large skillet with grapeseed oil and sauté 1 pound ground sirloin with chopped onion, garlic, green peppers, and spices. Gently mash 1 1/2 cup cooked Great Northern Beans and add 2 tsp. herbed EVO and stir to mix. Add to meat mixture. Add organic tomatoes, chopped red pepper and cooked kernel corn. Add 6 Tostito Garlic and Black Bean Chips to a microwavable dish. Add 1 cup chili meat sauce over chips, sprinkle with 3 diced Kalamata olives and 1 Tbsp. Mexican Four Cheeses. Microwave for 1 minute on power level #3 and serve immediately with fresh salad.
Serving Size: Makes 6 servings-1 cup taco sauce, 1 Tbsp. cheese, 6 chips
