V8 Slow Cooker Chicken Chili

Ingredients
1 lb. ground chicken1/2 cup chopped onions (fresh or frozen)1 3/4 cup (about one can) great northern beans1 3/4 cup (about one can) tri color beans1 pkg. chili seasoning mix14 oz. can peeled, crushed tomatoes (or diced, if you prefer)48 oz. V8 (or comparable) vegetable juice (you can use the hot or spicy version if you prefer)3 cloves minced garlic (or jarred equivalent)Cooking spraySalt and pepper to taste
Directions
1. Brown the ground chicken, onions, garlic, and 1/4 of the chili seasoning, with a touch of salt and pepper, in a skillet coated with cooking spray, crumbling the meat as it browns.

2. Place all ingredients, including meat mixture, in the slow cooker and stir.

3. Cook on low or medium heat for about 4 hours, stirring occasionally. Add salt and pepper to taste during cooking. If the chili seems to be losing too much liquid, add water.
