Ingredients
chicken thighs boneless skinless,1.5 poundspepper,red, sliced, 1pineapple, whole,chunkscocionut milk, unsweetened, 3.5 cupscurry powder 1 1/2 to 2 tbspjalapeno pepper 2, slivered with seedsbrown sugar 2 tbsp
Directions
Brown chicken sprinkled with curry, on both side
Meanwhile saute red pepper approx 4 minutes
Add pineapple and cook until just golden
Add cocconut milk and 1 tsp curry powder
Reduce slightly
Add Jalepenos and brown sugar blend..
Serve over a bed of rice and chicken
