Mock Potato Salad

Ingredients
1 medium to large head cauliflower3 stalks of celery, chopped1 small onion, chopped1 cup of Duke's Mayo or comparable 0 carb mayonnaise.
Directions
Chop the cauliflower and steam it for 6 minutes. Drain and cool.
Combine the cauliflower, chopped celery, chopped onion, add salt and pepper to taste. Fold in the mayonnaise and chill.

Serving Size: Makes 6 1-cup servings
