Quinoa Potato Salad

Ingredients
1/2 cup Quinoa, cooked according to package directions.1 lb red and/or yellow fingerling potatoes, cooked, cooled and diced to approximately 1/4 to 1/2 inch.1/4 cup onion, finely diced.2 tbsp Cilantro or Parsley, chopped--- Dressing---3 tbl olive oil3 tbl lemon juice1/2 tsp salt1/2 tsp pepper1 tsp cumin
Directions
Combine cooked quinoa, potatoes, onion and cilantro or parsley in a bowl or plastic bag.
Dressing: Combine olive oil, lemon juice, pepper, salt and cumin in a cup.
Pour dressing over quinoa mixture and either toss in bowl or close bag (leave an air pocket) and shake to mix.
Refrigerate for at least 2 hours.
Makes 8 side servings.
