sword fish kabobs

Ingredients

16 oz sword fish1/2 cup red sweet pepper1/4 cup red onionJuice and zest of half a lemon1/4 cup orange juice2 tbsp low sodium soy sauce1tsp minced fresh ginger1 clove garlic1 tbsp rosemaryPepper to taste
Cut swordfish into approx 1" cubes
Cut red onion and red pepper into chunks
Put on kabobs sticks, I got 5 of each ingredient per stick
Take all other ingredients and blend
Pour over kabobs and marinate for thirty minutes to an hour turning them to get marinade on all of the fish and veggies.
Grill for about 3 minute per side or until fish feels solid and is opaque, basting with marinade at each turn
Serving Size: makes 4 kabobs, 1 kabob per serving
