Roasted Cauliflower and Mushrooms

3 cups cauliflowerets (1 lb)1 cup chopped mushrooms (4 ozs)1/2 cup chopped red onion1 tsbp olive oil2 tsps lemon juice2 tsps balsamic vinegar or cider vinegar1/2 tsp salt1/4 tsp pepper2 cloves garlic, finely chopped1/3 cup chopped green onions (4 medium)
Heat oven to 350. Spray rectangular baking dish, 13x9x2 inches, with non stick cooking spray. Mix all ingredients except green onions. Spread evenly in baking dish.
Bake uncovered 40-45 minutes, stirring occasionally, until vegetables are tender and golden brown. Sprinkle with green onions.
