Black Bean and Salsa Soup

Ingredients
2 15 oz. cans black beans, drained, rinsed1 1/2 cups vegetable broth1 cup chunky salsa1 tsp. ground cumin4 tbsp. sour cream2 tbsp. scallions, chopped
Directions
In food processor or blender, combine beans, broth, salsa, and cumin. Blend until fairly smooth. Heat mixture over medium until thoroughly heated. Ladle into 4 individual bowls, and top each with 1 tbsp. sour cream and 1/2 tbsp. chopped scallion

    This is an awesome healthy soup... same recipe from allrecipes.com (great site for recipes- you can look for only low-carb/low fat recipes) I like to let this soup simmer for awhile to really let it thicken up... tastes even heartier! - 5/22/08
