lightly beat 2 eggs in a large bowl, add i cup finely chopped onion, 2 TB minced parsley, and 1 tsp salt. Add one 30-oz bag hash browns, thawed, and mix well. Add 1/4 cup flour and mix well. Heat 2 TB olive oil until just smoking in a large skillet or cast iron pan. Drop the potato mixture by scant 1/4 cups into the pan, and press them flat with the bottom of the measuring cup. Cook until the edges are set and the bottom is browned, about 3 minutes, and flip to cook the other side. Remove to a towel-lined paper plate and repeat until all the potatoes are cooked.
